Becky’s Kitchen: Peanut Butter Cookies

This week Becky shows us a quick and easy way to cook some peanut butter cookies.

 

 1 cup peanut butter (can use creamy or crunchy)
 1 cup light brown sugar, packed
 1 large egg
 Granulated sugar for dusting

1. Preheat oven to 350 degrees
2. Prepare baking sheets by spraying with non-stick spray
3. Whisk the egg in a medium mixing bowl until the yolk and white are fully
combined.
4. Mix in the peanut butter and brown sugar with a wooden spoon until well
combined. The dough will be rather sticky, so it’s best to put it in the fridge for
at least 30 minutes to firm up a bit. (You can wrap the dough in plastic wrap
and keep it in the fridge for several days. )
5. Form the dough into balls about 1 inch in diameter and roll each ball in the
white sugar.
6. Place at least 2 inches apart on the prepared baking sheet.
7. Flatten each ball to ¾” thick using the palm of your hand.
8. Using the back of a fork, make an “X” in the center of each cookie flattening it
little further.
9. Bake for 10-12 minutes, or until lightly browned, rotating sheet pan halfway
through for even baking.
10. Allow to cool for 5 minutes on baking sheet before placing on cooling rack to
cool completely.
11. Store in air-tight container.

NOTES: You can mix mini chocolate chips into the dough before chilling. You can also gently press unwrapped chocolate kisses on the tops of the cookies right when they come out of the oven.

You can make a bigger batch by increasing the amount of the ingredients – 2 cups of peanut butter, 2 cups brown sugar and 2 eggs as an example.
