Becky’s Kitchen – Monterey Quiche

Becky shares with us one of her favorite quiche recipes in her kitchen today.

2 pie crusts partially baked (10 inch)
6 eggs
½ tsp salt
½ tsp white pepper
1 ¾ cups heavy cream
1 cup Jack cheese
1 cup chopped green onions
1 cup diced or slivered Canadian Bacon
1 cup diced green chilis, drained

1. Whisk eggs.
2. Add cream, salt and pepper to egg mixture and stir to combine.
3. Stir in green onions, Canadian bacon, green chilies and shredded cheese.
4. Divide mixture evenly between the 2 pie crusts and bake in a 325 degree oven for 40 minutes, or until a knife inserted into the center comes out clean.
5. Serve one- Freeze one!
