Celebrating Summer – Squash and Tomatoes

One of the best things about summer is the glorious bounty of fresh fruits and vegetables available from the grocery store, farmer’s market or maybe even your own backyard. It is the perfect time to celebrate these gifts of summer by using them in some of your favorite recipes, and maybe trying new ones too.

Got Squash?

If you have several squash plants growing in your garden, you will probably have plenty of squash to harvest and use. I found some interesting squash recipes on the allrecipes! website that you might want to try.

Grilled Garlic Parmesan Zucchini is a really easy way to use zucchini or any squash while you have your grill going. You just slice the zucchini length-wise into three slices, then mix butter, garlic and parsley and spread it on both sides of each slice. Put the slices on the grill and sprinkle grated parm on the top of each one. Grill for about 8 minutes. Quick, easy and yummy!

Fried Stuffed Squash Blossoms are so delish, and I’ll admit they are the main reason I planted squash in my garden. If you have ever tasted them, you know what I’m talking about! Easy Cajun Grilled Squash is another simple way to use up your squash. You just slice yellow and zucchini squash and a large sweet onion into chunks and marinate them in a mixture of olive oil, cajun seasoning and a few other ingredients. When the grill is ready, put the veggies on skewers or directly on the grill for about 5 minutes.

How About Tomatoes?

Fresh summer tomatoes are the best! They are so flavorful and will be delicious however you fix them.

Mid-Summer Italian Bread Salad is a way to use up some of your tomatoes and stale bread. You will need cucumbers, garlic and basil as well as the tomatoes and bread. There is no cooking required. Very easy and refreshing!

Fried Green Tomatoes have such a different taste than ripe tomatoes that many people that aren’t too crazy about red tomatoes, actually love fried green tomatoes. You basically slice the tomatoes, dredge them in a mixture of flour and cornmeal, dip them in milk or buttermilk and fry them in oil. Don’t forget the ranch or other dressing for the dipping!

Mediterranean Summer Tomatoes is one of the easiest ways to fix fresh tomatoes. You simply slice them and put them in a serving dish. Sprinkle them with chopped shallots and a mixture of olive oil and balsamic vinegar. Serve with French bread to sop up the dressing as you eat the tomatoes.
