I’m always so happy when peach season rolls around.  There really is nothing better than biting into a juicy ripe peach!  Canned and frozen peaches just aren’t the same.  I’m thinking most everyone enjoys eating peaches in one form or another, but did you know that peaches are loaded with vitamins, minerals and antioxidants that can help keep your heart healthy as well as aid in preventing certain kinds of cancer?  They also have beta carotene which is useful for your eyes.  You can mix up some peaches and yogurt and either eat it for breakfast or slather it on your hair or face because peaches have moisturizing qualities too.  And, you’ll be glad to know that peaches are low in calories!  You can use peaches to make many wonderful dishes both sweet and savory.  CLICK HERE to read all about the healthful benefits of peaches.

RIGHT OFF OF THE PEACH TRUCK

The Peach Truck is a website that not only has many yummy peach recipes, but it also sells peaches and peach products.  As always happens, when I am researching a food site, I end up printing out lots of recipes that I want to try. Frankly, I don’t know if peach season is going to be long enough for me to have the peach supply I need to do my test kitchen thing!  Anyway, I plan on making the Butter Lettuce Salad with Pistachio-Peach Vinaigrette, the Peach and Pork Kabobs and finishing everything off with a Party Peach Mojito.  I’ll let you know when everything’s ready! HOW TASTY!

I really like the Taste of Home website and magazines because their recipes are home-cook tested and usually easy to make.  I just made their Peach Cobbler Cookies and they are amazing! (and gone) I plan to try the Peach BBQ Ribs which is a slow-cooker recipe, that I will serve with the Spinach and Bacon Salad with Peaches.  I just know you will find some “tasty” dishes to try too. CLICK HERE and see.

You know you really don’t have to do a lot of cooking to enjoy the deliciousness of fresh peaches.  Here is a really easy and delicious recipe from my kitchen.

Peach Napoleons

2 cups of sliced fresh peaches

3/4 cup sugar, divided

Juice of 1 lemon

1 large sprig of fresh mint

1 cup heavy whipping cream

1 teaspoon of vanilla extract

6 cinnamon graham cracker sheets, halved to make 12 squares

  1. In a large bowl, toss together peaches, ½ cup of sugar. Lemon juice and mint. Refrigerate for at least 2 hours.
  2. In a medium bowl whip heavy cream and the remaining sugar at high speed until soft peaks form. Stir in vanilla.
  3. Place 1 graham cracker square on a plate; top with a dollop of whipped cream and a few peach slices. Repeat layers twice, omitting peaches from the final layer. Garnish with more mint if desired.
